Baileys Original Irish Cream
Baileys Original Irish Cream plays a key role in the taste and texture of Baileys Fudge.
Can I use other brands of Irish Cream? Although I recommend the Baileys brand, you can use any high-quality Irish Cream liqueur.
Dark or Semi-Sweet Chocolate
There's no better combination than delicious dark chocolate and Baileys! When melted together with condensed milk, you have a decadent and smooth flavour and texture.
Can I use chocolate chips? You can also use high-quality chocolate chips (NOT compound) in place of chopped chocolate blocks.
Can I use milk chocolate? Milk chocolate is very sweet and will result in a very sweet fudge. I recommend using only dark or semi-sweet chocolate, or at a pinch using half dark and half milk chocolate.
Sweetened Condensed Milk
Sweetened condensed milk is an important ingredient in Baileys Fudge that provides sweetness, creaminess, and richness to the fudge, it also helps to bind the ingredients and create the desired texture.
Can I use any alternative milks? For this fudge to work, I only recommend using sweetened condensed milk or light sweetened condensed milk.
How to Make Baileys Irish Cream Fudge
The process to make Baileys chocolate fudge is very simple. You'll have a batch whipped up in no time!
- Grease and line a square cake tin with baking paper.
- Microwave chocolate and sweetened condensed milk together until melted and combined.
- Slowly pour in Baileys Irish Cream liqueur and stir until smooth and well combined.
- Scrape fudge mixture into the prepared tin and smooth out with the back of a spoon.
- Refrigerate for 6 hours or overnight. Remove from tin and slice into 25 even squares.

How much alcohol is there per square?
There is less than 3 millilitres (1 tsp) of Baileys per square, which is just a trace amount of alcohol. However, it is still very important to let others know it contains alcohol before sharing.
Why is my mixture crumbly?
You may have burnt or overcooked the chocolate. Make sure to heat together with the sweetened condensed milk and stir well after one minute.
If you accidently got any liquid or water into the mixture before heating, then the chocolate may have seized and turned crumbly. Make sure your mixing bowl and chopping board are clean and dry before using.

Ingredients
- 600 g (21 oz) block of dark or semi-sweet chocolate, roughly chopped
- 395 g (14 oz) tin of sweetened condensed milk
- ⅓ cup (60 mL) Baileys Original Irish Cream Liqueur
Instructions
- Grease and line a 20 cm (8 inch) square cake tin with baking paper, ensuring there is at least 3 cm (1 inch) of baking paper overhanging for easy removal of the fudge.
- Place chopped dark chocolate and sweetened condensed milk in a large heat proof bowl. Stir together.
- Microwave for 1 minute on full power. Stir well. Microwave for another 1 minute and stir until thick.
- Slowly pour in Baileys Irish Cream liqueur and stir until smooth and well combined. Scrape fudge mixture into the prepared tin and smooth out with the back of a spoon.
- Refrigerate for 6 hours or overnight. Remove from tin and slice into 25 even squares.

- Chocolate: many chocolate chips aren't designed to be melted down. If you want to use chocolate chips instead of a block of chocolate, make sure they are high quality (not labelled 'compound' or 'candy melts').
- Irish Cream Liqueur: you can use any brand of Irish Cream Liqueur.
- Can I use milk or white chocolate instead? I don't recommend using milk or white chocolate. The fudge may not set properly.
