The Christmas countdown is ON! Join in the holiday fun with these Santa Hat brownies 🎅. @ebayau makes holiday entertaining easy with a great range of kitchen and dining ware at the best prices! Ingredients
*1 batch of your favourite brownie batter
*125 g (4.5 oz) butter, at room temperature
*1.5 cups icing (powdered) sugar
*1 tbsp milk
*24 strawberries

Method
1. Preheat the oven to 160c / 320f (fan-forced) or 180c / 355f (standard). Grease and line a 24-hole mini muffin pan.
2. Prepare your brownie batter. Distribute brownie batter evenly among the holes. Bake for 12-15 minutes (depending on your brownie recipe) or until a skewer inserted into one of the brownies comes out clean. While the brownies cool, prepare the buttercream.
3. Add the butter, sugar and milk to a large mixing bowl. Using a handheld electric mixer (or a stand mixer), beat on medium-high speed for 5 minutes or until very light and fluffy.
4. Spoon the buttercream into a piping bag or zip-loc bag and snip a small opening into one of the corners.
5. Cut the stem off the strawberries and set aside.
6. To assemble the Santa hats: take one cooled brownie and pipe a small blob of buttercream onto the centre. Press the strawberry (point side up) firmly onto the buttercream to "glue" it to the brownie. Carefully pipe little circles of buttercream all the way around the base of the strawberry. Pipe a small circle on the point of the strawberry for a "tassel." Refrigerate for 1 hour or until the buttercream is set. Enjoy.

Ingredients
* 3 egg whites
* 3/4 cup caster sugar
* 1 tsp vanilla extract

Method
1. Preheat the oven to 100c (210f). Line a large baking tray with baking paper.
2. Beat the egg whites with an electric hand mixer (or using an electric stand mixer) until frothy.
3. Add 1 tbsp of sugar at a time, beating for 2 minutes or until sugar is dissolved. Repeat for remaining sugar.
4. Add vanilla essence and beat until sugar is dissolved and the meringue mixture holds stiff peaks.
5. Using a cup or 10 cm circular cookie cutter, trace 6 circles onto the baking paper using a non-toxic marker. Flip the paper over.
6. Evenly distribute the meringue mixture across the 6 circles. Hollow out the centres to shape into nests.
7. Bake for 1 hour and 30 minutes. Allow meringues to cool completely in the oven with the door closed.
8. Fill with whipped cream, berries, and mint (or whatever you like!). Serve immediately and enjoy!

Mini Oreo cheesecakes 🍫 looking for desserts to share? Ingredients

• 500 g (8.8 oz) cream cheese, softened
• 1/2 cup white sugar
• 1 tsp vanilla essence
• 1/2 cup sour cream
• 2 eggs
• 20 Oreos, plus extra to decorate
• Whipped cream, to decorate

Method

1. Preheat the oven to 160 c (320 f). Line a 12-cup muffin pan with muffin liners.
2. Beat together the cream cheese, sugar and vanilla until pale and creamy.
3. Add the sour cream and beat until just combined.
4. Beat in the eggs, one at a time, making sure not to over-mix the batter.
5. Finely crush 8 of the Oreos and add to the cheesecake mixture. Stir to combine.
6. Take 12 Oreos and place at the bottom of each muffin liner. Distribute the cheesecake mixture evenly over the top of the Oreos.
7. Bake for 15-20 minutes or until just set with a slight wobble. Allow to cool for one hour or until room temperature.
8. Refrigerate for 3 hours or overnight. Decorate with whipped cream and Oreos. Refrigerate until ready to serve.
